2/3 c oil
3 eggs
Mix all ingredients together until combined. Spoon out teaspoonfuls onto greased or lined cookie sheet.
Bake 375 for 9 minutes.
Cream Cheese frosting:
8 oz cream cheese, softened
1 T sour cream
1/4 tsp. vanilla
1 1/4 cup powdered sugar
Pulse all but the sugar in a food processor until combined. Add sugar and process until smooth.
Put about 1 T frosting in between two cooled cookies. roll in crushed mints.
