Pinacolata Cake

Makes jelly roll pan size for thin or cake 13x9 for thick cake.

Set oven at 350 bake 20 minutes.

10oz can	Mandarin oranges, drained	Take juice and add water to make 1 cup
4	Eggs	1/2 cup	Oil
2 Tbs.	Flour	1	White or yellow cake mix

Directions:

Mix ingredients together.

Bake in greased pan at 350 for 20 minutes.

Frost with Pinacolata topping.

Pinacolata Topping

Topping for pinacolata cake.

1 container	12 oz Cool Whip	2 packages	Vanilla instant pudding (small box)
16 oz can	Crushed pineapple	About 1/2 cup	Coconut (optional)

Directions:

Mix cool whip, pudding and can of pineapple (including the juice).

Mix well and top the cake.

Sprinkle coconut over the topping.
